The planets have aligned to lure stars of the culinary and musical worlds here for the Highlands Food and Wine Festival, November 8-11.

Chef Jason Daly is a huge addition to this year’s line up, and he’ll be cooking at the Main Event and the Gospel Brunch. Chef Daly is well-known nationally for his tenure on The Food Network’s, “Chopped,” which featured him creating Surf & Turf-themed plates utilizing land and sea resources against other high-profile chefs.
An up-and-coming addition to Charleston’s ever-growing culinary scene, Daly graduated from Le Cordon Bleu in 2011 and has run kitchens from Savannah and Austin to Boston and Portland, Maine. Whether having worked under Michelin-starred chefs in New York City, securing AAA Four-Diamond Awards in Savannah, or winning Maine’s Food and Cocktail Pairing competition, Chef Jason always strives for excellence and pushes the boundaries in his kitchen.
Daly chose to take part in the Food and Wine Festival because of its rich diversity in chefs and culinary styles.
“Some of the best chefs from the Southeast Region will be showcasing their talent and technique and I was honored to be asked to be a part of that,” he explained. “I plan to prepare my creative take on New England Clam Chowder for the Main Event. I smoke my clams and deconstruct the dish down to its basic elements and highlight each one separately, so that when it all comes together each ingredient is clearly defined and noticeable.
“For the Gospel Brunch, I’ll prepare two styles of Eggs Benedict. One is a New England-inspired approach, featuring house gin-cured salmon, red onion, poached eggs, and a roasted tomato and caper hollandaise. The other version features rosemary-roasted prime rib, fresh tomato, pickled red onions, and a truffled smoked paprika hollandaise. Both are equally as decadent as each other; I’m a sucker for big, bold flavors!”
