Barbara Werder of Highlands has fond memories of making her Great Aunt Jo’s Coffee Cake in seventh grade. This was the first “real” recipe she tried that wasn’t Chef Boyardee pizza!
It was an old-fashioned dish which was an instant success. Her friends and family were thrilled because, quite frankly, they were tired of her pizza experiments. Years went by and this recipe always stayed in her family file.
Barbara mentioned, “About five years ago I reconnected with my cousin whom I had not seen or talked to since childhood. Both our mothers had passed on, and she and her sister said they wanted to come for a visit. I thought that it might be nice to surprise them with Aunt Jo’s Coffee Cake. When I told them where I had gotten the recipe they were delighted because it was one their mother had made years ago and they had somehow lost track of it.”
During the visit, as they sipped coffee and enjoyed the pastry, Barbara found they had opened up a new relationship and it all started with the history of this delicious cake. It brought back lots of family memories that they shared with each other for the first time.
So this holiday season, why not make some memories of your own to share, by baking a couple of Aunt Jo’s Coffee Cakes. They make great gifts and are a lovely way to welcome friends to your home.
Aunt Jo’s Coffee Cake
Preheat oven to 375 degrees. Grease an 8.5” x 11” pan and set aside.
To make the batter, sift together in bowl:
3 cups Sifted Flour
1/2 tsp. Salt
6 tsp. Baking Powder
1 1/2 cups Sugar
Cut in 1 cup Butter with a pastry blender.
Combine 2 eggs, 1 cup of milk, and 2 tsp. vanilla.
Add wet ingredients to dry ingredients.
For the crumb layer, blend together:
2 cups brown sugar
4 tsp. cinnamon
4 tbsp. flour
4 tbsp. butter
Dash of salt
1 cup of chopped nuts, if desired
Spread half of the batter on the bottom of the pan and top with half of the crumb mixture. Add the remaining batter, then the remaining crumb mix.
Bake for 38–45 minutes.
Test for doneness with a toothpick.
