A man of many talents and interests, the common thread through Billy Leonard’s life is education. He is on the board of the Fellowship of Christian Athletes, has a ministry, he is writing a book, and now is a Certified Health Coach.
He and his wife Yen Ling, grow much of their own produce and their three daughters think it’s great fun to harvest their salads. While Yen Ling cooks a lot of traditional Taiwanese foods, Billy leans toward a more basic meal, easy to prepare, and without sugars and starches.
Does this mean his food is boring?
Far from it. Using fresh herbs and produce, he can whip up a tasty dish in no time.
When he was asked for a recipe, Billy laughs.
“Most of my meals are really simple,” he says. “Prior to my food shift five years ago, I ate unhealthy Mexican food at least two to three times per week. Now I get to enjoy the flavor of Mexican food without the pain of it.”
He makes guacamole and salsa from scratch. He then cooks a thin steak with lime juice, salt, and pepper. He will cut the steak into small squares, then put a dab of guacamole on top, then a jalapeño on top of that, then a dab of salsa on top of that, and top it off with a cilantro leaf.
Billy’s Guacamole
Ingredients
3 Hass Avocados (also known as Bilse Avocados)
1/3 Red Onion
1 mashed Garlic Clove
1 juiced Lime
1 tbsp of Cilantro
Salt and Pepper to taste (if taste isn’t strong enough, add more)
Instructions
Put all of that in a bowl and mix/mash with a spoon
Billy’s Salsa
Ingredients
3 Red Tomatoes
1/3 Red Onion
1.5 juiced Limes
1/2 cup of Cilantro
5-10 Jalapeno Slices (to taste)
Oregano to taste
Cumin to taste
Salt and Pepper to taste (if taste isn’t strong enough, add more).
Instructions
Put all that in a blender and blend just enough to mix.
