In the morning, nothing tastes better than a slice of hearty, chewy homemade bread.
Baking for hours is not most people’s idea of fun, however. This breakfast bread is ready in 30 minutes. It’s healthy, deliciously sweet, and yeast-free.
Full of fiber, protein, and sweet cranberries, this bread is great toasted with butter or jam. The dough in this recipe rises because of the chemical reaction between baking soda and buttermilk.
Ingredients:
2 cups Spelt or whole wheat flour
1 tsp Baking soda
1 tsp Baking powder
2 cup Rolled oats
1/2 tsp Sea salt
1/4 cup Pure maple syrup
1/3 cup Coconut oil or butter melted
1/2 cup Flax seeds
1 cup Raw walnuts
1/2 cup Dried cranberries
2 cups Buttermilk
Instructions:
Preheat the oven to 375 degrees F. Combine the first 5 ingredients in a large bowl. Add all other ingredients. Pour the batter into an oiled loaf pan. Bake for 25 minutes or until the top is light brown. Let stand in the pan for 15 minutes and then serve.
