Summer’s Juicy Fruity Salad

Seasonal fruit makes salads more refreshing and full of life, as the salads explode in flavor and in color.
The juicy, succulent fruit in this salad recipe makes you forget the veggies that are also in there. Considering the fact that this fruity salad is rich in iron, calcium, magnesium, multiple vitamins and folic acid, it’s a great, quick dish to try this summer. Creamy avocado balances the crunch of the onions and the cucumbers, while peaches and strawberries give this salad its light sweetness.
Ingredients
For Salad:
2 cups mixed greens
1 small Onion diced
1 medium Peach sliced
1 cup Strawberries sliced
1 medium Avocado sliced
2 small Cucumbers sliced
1 medium Bell pepper sliced
For dressing:
2 tbsp Mint leaves diced
4 tbsp Olive oil
2 tbsp Fresh lemon juice
1/2 tsp Sea salt
Pinch of Cayenne pepper
1/4 tsp Honey or maple syrup
Instructions
1. Arrange all salad ingredients in layers on a large plate.
2. Combine all dressing ingredients in a bowl.
3. Pour the dressing over the salad and serve.
